4 (6-ounce) Florida Spot Fish fillets (skin on)
5 tablespoons cornstarch
2 tablespoons vegetable oil for cooking
Sea salt and fresh ground pepper, to taste
Preheat a large sauté pan over medium-high heat. Lightly season the fish fillets with salt and pepper, to taste. Evenly dredge the fillets in the cornstarch, making sure they are thoroughly coated. Add the oil to the preheated sauté pan. Carefully place the fillets in the hot pan skin side up and sear for 3 minutes on each side until completely cooked through-out. Remove from pan and lightly season with salt and pepper.
