6 ounces Florida blackberries, cut in half
⅓ cup Florida sweet bell peppers (any color), diced small
1 ½ pounds boneless & skinless chicken thighs
1 tablespoon BBQ spice blend (plus more as needed)
½ red onion, peeled and diced fine
2 tablespoons fresh cilantro, chopped
1 ½ limes, juiced
Sea salt and fresh ground pepper, to taste
Olive oil for cooking
Preheat a grill or cast iron grill pan over medium-high heat. Heavily season the chicken thighs on both sides with the BBQ seasoning blend. Lightly drizzle oil on the grill pan and add seasoned chicken. Carefully add chicken to preheated pan and cook for 3 minutes on each side or until chicken is caramelized and crispy. Use an internal food thermometer to make sure the chicken is cooked thoroughly to 165 degrees. Remove cooked chicken from pan or grill and let rest.
In a small mixing bowl, combine the diced sweet peppers, diced onion, halved blackberries, chopped cilantro, fresh squeezed lime juice and stir. Season the blackberry salsa with a good pinch of the BBQ seasoning and a splash of olive oil. Stir and taste. Adjust seasoning with sea salt and fresh ground pepper, to taste.
To serve, arrange the cooked chicken on a platter and add blackberry salsa to the top. Garnish with sliced limes and fresh sprigs of cilantro.
