1 pound Florida alligator meat
8 cups Florida romaine lettuce, chopped
1 (8-ounce) container Florida cherry tomatoes (optional)
Caesar dressing (your favorite)
1 cup Parmesan cheese
1-2 tablespoons blackening seasoning (your favorite)
Oil for cooking
Sea salt and fresh ground pepper, to taste
Preheat a large sauté pan to medium-high heat and add 1 tablespoon oil. Liberally season gator meat with blackening season and cook for 2 to 3 minutes per side (do not overcook). Remove from pan and set aside to rest for 5 minutes, then thinly slice.
In a large bowl, combine lettuce, tomatoes, parmesan cheese and dressing and toss to coat. Top each salad with at least 4 ounces of gator meat per serving.
