2 dozen fresh Florida oysters, shucked and on the half shell
Florida hot sauce (your favorite), to taste
1 stick unsalted butter
2 tablespoons fresh parsley, chopped fine
3 lemons (1 for juice, 2 cut for garnish)
1 loaf crusty French bread
¼ cup Parmesan cheese, grated
Sea salt and fresh ground pepper, to taste
Preheat charcoal or gas grill. Combine butter, hot sauce and lemon juice, salt and fresh ground pepper in a small sauce pot. Place the pot on the grill to melt the butter and stir to combine ingredients. Taste and adjust with more lemon juice or hot sauce if needed.
Carefully place the oysters (on the half shell) directly on the grill. Cook for several minutes until the oysters start to bubble. Carefully spoon the butter over the oysters (butter can cause the fire to flare up). Sprinkle oysters with Parmesan cheese and parsley and serve with fresh lemon and French bread.
