1 Florida grapefruit, halved cross-wise
2 tablespoons Florida raw cane sugar
1 small pinch sea salt
Trim a little of the peel off the bottom of each grapefruit half to keep them sturdy. Using a paring knife, gently loosen the grapefruit segments and remove all seeds. Place the Florida grapefruit halves cut-side-down on a few paper towels for 3 to 5 minutes to soak up excess moisture.
Turn the grapefruit halves cut-side-up on a fire-safe surface. Discard the paper towels. Evenly sprinkle the sugar over tops of exposed grapefruit. Carefully use a kitchen torch to brown the sugar. Sprinkle with the sea salt and serve with Florida orange juice and cottage cheese, if desired.
