1 pound Florida alligator sausage, sliced into small rounds
¾ cup Florida sweet peppers, diced
¾ cup Florida celery, washed and diced
2 large Florida tomatoes, chopped
½ pound fresh okra, sliced into 1-inch sections
1 large onion, diced
2 tablespoons fresh garlic, chopped fine
2 cups canned diced tomatoes
1 teaspoons gumbo filé
1 quart vegetable broth
1 tablespoon Cajun seasoning
1 cup vegetable oil
1 cup flour
In a medium-sized pot, combine flour and oil over medium heat. Cook the flour mixture for 20 minutes while stirring the whole time to ensure the flour does not burn on the bottom of the pan. The flour mixture should become thick and have about the same color as peanut butter. Remove the flour mixture from the heat and set in a safe place until later use.
Preheat a large pot over medium heat. Add 1 tablespoon cooking oil to the preheated pot. Add the alligator sausage and continue to cook the sausage until it is caramelized and golden brown. Next add the onions, peppers and celery. Continue to cook for another 2 to 3 minutes. Next add garlic, okra and Cajun seasoning. Let ingredients cook for another 2 minutes. Add all the tomatoes and vegetable broth. Stir ingredients and bring to a light boil. Using a whisk add 1 tablespoon of the cooked flour mixture to the pot of boiling ingredients. After adding the flour mixture, let the ingredients come back to a boil. Repeat the process of adding a small amount of the flour mixture to the cooking ingredients until the liquid in the pot will lightly coat the back of a spoon or desired consistency is reached. Add the gumbo filé seasoning to the finished gumbo pot and stir completely. Taste gumbo and adjust seasoning with salt and pepper. Serve gumbo warm with rice.
