Florida Alligator Skewers
1 pound Florida alligator meat, diced large
2 tablespoons Florida seafood seasoning blend
6-8 wooden skewers
Oil for cooking
Honey Mustard Dipping Sauce
6 tablespoons Florida honey
3 tablespoons Dijon mustard
2 tablespoons mayonnaise
1 tablespoon freshly chopped parsley
Cayenne pepper, to taste
Sea salt and fresh ground pepper, to taste
Combine all sauce ingredients, adjust seasoning if needed and set aside.
Preheat a large sauté pan over medium-high heat. Skewer 3 to 4 pieces of alligator meat on each wooden skewer, season liberally with seafood seasoning blend and set aside. Add a small amount of oil to the pre-heated pan and cook alligator skewers for 2 minutes per side, taking care not to overcook. Remove the Florida alligator skewers from the heat.
Serve the Florida alligator skewers with the honey mustard dipping sauce. Garnish with fresh herbs.
