½ cup Florida blackberries, lightly chopped
6-8 ounces quality cheese, sliced (like sharp cheddar, smoked gouda or Swiss)
4 slices brioche bread
2 tablespoons unsalted butter, softened
¼ jalapeno, seeded and sliced thin (if desired)
4 strips of thick cut bacon, cooked crispy
1 tablespoon mayonnaise, if desired
2 pinches all-purpose seasoning
Preheat a large sauté pan or cast iron skillet over medium heat. Assemble sandwiches by evenly spreading mayonnaise on the inside. Next, add a layer of cheese. Then, evenly add chopped blackberries, bacon and jalapeno. Lastly, add the rest of the cheese and close the sandwiches. Evenly spread half of the butter on the top of each stuffed sandwich. Sprinkle each buttered sandwich with a small pinch of seasoning blend. Carefully place the stuffed sandwiches butter side down in the preheated pan. Use the remaining butter to spread evenly over the top of the cooking sandwiches, and sprinkle lightly with the seasoning blend. Cook the grilled cheese sandwiches for 2 to 3 minutes on each side until crispy and golden-brown on the outside and gooey on the inside. Remove the grilled cheese sandwiches from the pan and let cool slightly before serving.
