1 cup fresh Florida blueberries
1 tablespoon Florida honey
1 pound raw ground pork breakfast sausage
1 tablespoon fresh herbs (rosemary and thyme), chopped fine
1 teaspoon vegetable oil
Preheat a large cast iron skillet or saute pan over medium-high heat. In a medium mixing bowl, combine the breakfast sausage, herbs and honey. Mix ingredients well to combine. Add the Florida blueberries and lightly mix to combine without smashing the fresh blueberries and hand-form 10 equal-sized patties. Add the vegetable oil to the preheated pan. Carefully add the patties to the pan without overcrowding. Cook the Florida blueberry breakfast sausage patties on each side for 3 to 5 minutes until browned and cooked completely throughout. After checking the doneness with a food thermometer (pork sausage should be cooked to an internal temperature of 160), remove from the pan and let drain on paper towels. Serve warm as part of a complete breakfast.
