¼ cup fresh Florida blueberries
2-3 teaspoons Florida honey
1 cup unsweetened vanilla almond milk
½ teaspoon pure vanilla extract
⅓ cup chia seeds
Pinch of cinnamon
Add blueberries, honey, almond milk, vanilla extract and cinnamon to a blender and combine for 10 to 15 seconds until smooth. Transfer mixture to a sealable jar and add in the chia seeds. Mix well and let sit for 5 minutes. After 5 minutes, mix the pudding 1 more time, then cover and place in the fridge for a minimum of 5 hours or overnight. Top and serve with desired toppings: granola, coconut shavings, fresh blueberries.
