2 heads Florida romaine, chopped
1 cup croutons (your favorite)
½ cup Parmesan cheese, grated
Caesar Dressing
½ cup Parmesan cheese, grated
2 lemons, juiced and zested
⅔ cup olive oil
1 tablespoon Dijon mustard
2 garlic cloves
3-4 anchovies (optional)
Sea salt and fresh ground pepper, to taste
To make dressing, add cheese, lemon juice and zest, olive oil, mustard, garlic, anchovies (if using), salt and pepper to a food processor. Pulse until thoroughly combined and set aside.
Add desired amount of dressing to romaine lettuce and toss to coat. Top with cheese and croutons, serve immediately.
