3 Florida bell peppers, sliced thin
1 pound Florida chicken breasts, sliced thin
1 tablespoon Florida Key lime juice
1 sweet onion, sliced thin (optional)
2 tablespoons Latin or taco seasoning (your favorite)
1 tablespoon oil for cooking
Sea salt and fresh ground pepper, to taste
Preheat oven to 425 degrees. Add sliced peppers (and onions if using) to half of the baking pan, drizzle with oil and sprinkle with seasoning. Add the sliced chicken to the other half of the pan, drizzle with oil and sprinkle with seasoning. Season everything with salt and pepper and Key lime juice. Place in the oven for 15 to 20 minutes or until chicken is thoroughly cooked. Remove from the oven and serve with warm corn tortillas and your desired toppings.
Fresh tip: Easily convert this to vegetarian fajitas by subbing in more Florida vegetables for the chicken!
