1 cup Florida cilantro, chopped
2 tablespoons extra virgin olive oil
1 ½ cups long-grain white rice
1 clove garlic, minced
2 ¼ cups water
1 lime, zested
3 tablespoons lime juice
1 teaspoon all-purpose seasoning (such as Everglades)
Sea salt and fresh ground pepper, to taste
Preheat a medium sauce pot over medium heat. Carefully add the rice and olive oil to the preheated pot. Cook the rice for just a few minutes while stirring. The rice should just barely get toasted and become fragrant. Add the water, lime zest, and seasoning blend to the lightly toasted rice. Bring ingredients to a boil, and then turn the heat down to a low simmer and cover. Cook rice on low for about 15 minutes or until tender. Remove the rice pan from the heat and fluff with a fork. Add the lime juice and chopped fresh cilantro to the cooked rice. Stir ingredients lightly. Taste the rice and adjust seasoning with salt and pepper. Serve warm.
