1 pound Florida shrimp, peeled and deveined
2 Florida oranges, zested and juiced
1 Florida bell pepper, diced fine
2 tablespoons Florida honey
½ small red onion, diced fine
½ cup cilantro, chopped
⅓ cup extra-virgin olive oil
2 tablespoons lemon juice
1 tablespoon Dijon mustard
1 teaspoon garlic, minced
2 tablespoons seafood seasoning blend, divided
Hot sauce (optional)
Sea salt and fresh ground pepper, to taste
Bring a large pot of water to a rolling boil. Add 1 tablespoon seafood seasoning and shrimp. Cook for 3 to 4 minutes or until cooked through. Remove from heat and drain. Place shrimp, bell peppers, and onions in a large bowl and set aside. In a small bowl, combine orange juice and zest, lemon juice, mustard, honey, garlic, 1 tablespoon seafood seasoning, hot sauce, salt, and pepper. Whisk thoroughly to combine and pour over the shrimp mixture. Mix, then fold in cilantro, taste and adjust seasoning as needed. Store in refrigerator until ready to serve.
Fresh tip: This dish is best served when it has had several hours to marinate. Discard any leftovers after 3 days.
