1 large or 2 small heads Florida escarole, rinsed and sliced thin
4 heads Florida endive, sliced thin
1 bunch scallions, sliced thin
2 tablespoons Florida honey
1 tablespoon apple cider vinegar
½ cup mayonnaise
1 ½ tablespoons spicy mustard
½ lemon, juiced
1 ½ teaspoons Florida seasoning blend (Everglades or your favorite)
Sea salt and fresh ground pepper to taste
In a small mixing bowl combine honey, vinegar, mayonnaise, mustard, lemon juice and Florida seasoning blend. Use a whisk to completely mix all the ingredients together. Taste the dressing and adjust the seasoning to taste with salt and pepper if needed. In a large mixing bowl, combine the Florida escarole and endive. Add the scallions to the bowl and mix lightly. Evenly pour most of the dressing onto the escarole mix and stir. Add the remainder of the dressing if needed and stir to coat. Keep slaw covered and cold in the refrigerator until ready to use.
