1 pound Florida alligator meat
½ cup Florida bell pepper, diced small
¼ cup onion, diced small
1 (15-ounce) can light red kidney beans, rinsed and drained
1 (15-ounce) can black beans, rinsed and drained
1 (28-ounce) can diced tomatoes
2 tablespoons tomato paste
2 tablespoons garlic, minced
1 tablespoon chili powder
1 teaspoon oregano
1 teaspoon chipotle chili powder
1 teaspoon cumin
1 teaspoon smoked paprika
1 teaspoon onion powder
Several dashes hot sauce (your favorite)
Oil for cooking
Sea salt and fresh ground pepper, to taste
Preheat a large pot on medium heat and add oil to coat. Add gator meat and cook for 2 to 3 minutes per side until cooked all the way through. Remove cooked gator meat and set aside. Drizzle more oil in the same pan and add bell peppers and onions to sauté for 6 to 8 minutes or until soft. Add garlic, tomato paste, chili powders, oregano, cumin, smoked paprika and onion powder and stir to combine. Next add the beans, diced tomatoes, salt and pepper, and cook for 15 to 20 minutes or until beans are soft. Add cooked gator meat and as much hot sauce as desired. Stir to combine and adjust seasoning as needed. Serve warm with toppings such as sour cream or shredded cheese.
