1 pound Florida alligator sausage, diced
3 cups Florida potatoes, diced medium
3 cups kale, chopped
1/2 onion, diced small
1 tablespoon garlic, minced
1 to 2 cups heavy cream
4 cups chicken broth (or vegetable broth)
1 tablespoon all-purpose seasoning blend (your favorite)
1 tablespoon Italian seasoning
Oil for cooking
Several dashes of hot sauce (optional)
Sea salt and fresh ground pepper, to taste
Preheat large pot to medium heat and add oil. Add onions and garlic and saute for 5 minutes. Add diced gator sausage and saute for another 5 minutes or until golden brown. Next add potatoes, kale, all-purpose seasoning, Italian seasoning, heavy cream and chicken broth. Season with salt and pepper, bring to a boil, then reduce to a simmer until potatoes are fork-tender. Taste and adjust seasoning as needed. Serve with warm bread.
Fresh tip: Liquid (broth and cream) can be adjusted to preference of thickness of soup.
