Florida Blueberry Sauce
2 cups Florida blueberries
3 tablespoons Florida sugar
½ lemon, juiced
Florida Orange and Blue Cocktail
4 ounces Florida rum
6 ounces freshly squeezed Florida orange juice
1 ounce freshly squeezed lime juice
2 teaspoons Florida Blueberry Sauce
4 ounces soda water
Several fresh Florida blueberries and orange peel for garnish
Several ice cubes
Florida Blueberry Sauce
In a medium-sized saucepan, combine 2 cups blueberries, sugar and lemon juice. Place the pan over medium-high heat and bring to a simmer while stirring. Cook blueberry compote for 6 to 10 minutes until thickened. Let cool and then puree blueberry sauce in a blender or food processor until smooth. Keep cold until ready to use.
Florida Orange and Blue Cocktail
In a cocktail shaker, add rum, orange juice and lime juice. Fill shaker halfway with ice. Place the top on the shaker and vigorously shake for at least 30 seconds. Fill 2 collins glasses with ice. Use a small spoon to add 1 teaspoon of the blueberry syrup to the rim of each glass. Use an ice strainer to pour the rum mixture evenly into the glasses. Garnish each drink with a fresh orange peel and a few Florida blueberries. Drink responsibly.
