1 ripe Florida peach, pit removed and roughly chopped
½ fresh lemon, juiced
½ teaspoon Florida sugar
1 bottle Florida champagne
Rinse blender and make sure all the parts are clean and ready to use. Add fresh-chopped peach, sugar and lemon juice. Blend ingredients until smooth. Run peach mixture through a mesh strainer to remove any bits not blended. Add two tablespoons of strained peach mixture to each champagne glass, and top with chilled Florida champagne.
