3-5 Florida peaches
2 Florida pork tenderloins
¼ cup Florida orange juice
2 tablespoons Florida honey
1 tablespoon Dijon mustard
1 tablespoon garlic, minced
1 tablespoon fresh rosemary, finely chopped
1 tablespoon fresh thyme, finely chopped
Salt and pepper
Dash of cayenne pepper
Squeeze of lemon juice
Preheat oven to 375 degrees.
Peel, remove pit, and roughly chop half of the peaches. Put in blender with honey, mustard, lemon juice, cayenne, garlic and orange juice. Pour mixture into small saucepot over medium-high heat. Add chopped herbs and bring to a boil. Reduce to simmer for 5 minutes. Remove and set aside.
Preheat skillet over medium-high heat. Season pork with salt and pepper. Sear tenderloins on all sides until golden brown. Place in oven for 15 minutes. Remove and brush on glaze. Put back in the oven until internal temperature reaches 145 degrees. Serve warm.
