1 pound Florida shrimp, peeled and deveined
4 ears Florida sweet corn, cut off the cob
½ cup Florida bell pepper, diced small
¼ cup Florida celery, diced small
¼ cup green onions, chopped fine
½ cup bacon, cooked crisp and roughly chopped
½ cup heavy cream
1 tablespoon garlic, minced
1 tablespoon all-purpose seasoning (your favorite)
2 tablespoons unsalted butter
1 tablespoon vegetable oil
1 tablespoon fresh herbs (your favorite)
Squeeze of fresh lemon juice
Sea salt and fresh ground pepper, to taste
Preheat large skillet over medium-high heat. Add oil and butter. sauté garlic, bell peppers, and celery for 2 minutes. Season shrimp with salt and pepper and add to skillet and sauté for another minute. Next add the corn and all-purpose seasoning; mix and sauté for 2 minutes. Stir in bacon bits and mix for another 2 minutes. Pour in the heavy cream. Bring to a boil then reduce to a simmer until slightly thickened, about 5 minutes. Taste and adjust seasoning if needed. Add in green onions, fresh herbs and lemon juice and serve warm over rice.
