4 (6- to 8-ounce) Florida spiny lobster tails, cut in half lengthwise
2 tablespoons Florida seafood seasoning blend, divided
Florida hot sauce, to taste
2 sticks (1 cup) unsalted butter
4 lemons (2 juiced and 2 quartered)
1 tablespoon fresh herbs (parsley, oregano, thyme), chopped fine
1 tablespoon fresh garlic, chopped fine
1 tablespoon vegetable oil
Sea salt and fresh ground pepper, to taste
Preheat the oven to 400 degrees. Preheat a large, ovenproof sauté pan over medium-high heat. In a small saucepan, add the unsalted butter, garlic, 1 tablespoon seafood seasoning blend, a few dashes of hot sauce and lemon juice. Cook ingredients over low heat while occasionally stirring. Once melted, taste and adjust seasoning with salt and pepper.
Add the oil to the preheated pan. Evenly season the exposed lobster meat with the remaining seafood seasoning blend and fresh herbs. Carefully place the lobster halves seasoned-side down and let cook for 2 to 3 minutes until seared. Flip over each tail half and place the pan in the preheated oven. Cook lobsters for 4 to 7 minutes until just done. Carefully remove the cooked lobster tails from the oven and place them on a platter. Serve the lobster tails with the melted butter mixture on the side. Garnish the lobsters with the quartered lemons and any leftover fresh herbs.
