4 ears fresh Florida sweet corn, shucked and silk removed
1 cup Florida Hot Honey BBQ sauce
1 Florida jalapeno, sliced thin for garnish
1 teaspoon BBQ spice mix (your favorite)
1 teaspoon unsalted butter
1 tablespoon fresh chives for garnish, chopped small
1 lime for garnish, cut into eighths
Preheat a large oven-safe skillet or sauté pan over medium heat. Carefully cut each ear of corn in half lengthwise, then again making quarters. Preheat the oven to 375 degrees. Use a BBQ brush to give each quartered ear of corn a layer of the Florida Hot-Honey BBQ Sauce. Season each corn rib with the dry BBQ seasoning. Add the unsalted butter the preheated pan, then add the brushed and seasoned corn ribs to the pan and cook, occasionally turning them for about 3 minutes on each side. Remove the pan with the corn ribs from the heat and place them in the preheated oven to finish cooking for about 10 minutes until they are caramelized and crisp-tender. Remove the corn ribs from the pan onto a platter or serving dish. Garnish with more BBQ sauce, chives, lime wedges and sliced jalapeno. Serve warm.
