1 ½ pounds Florida swordfish, skin removed and cut into 1 ½ inch chunks
1 large Florida zucchini, cut into 1 ½ inch chunks
2 or 3 Florida yellow squash, cut into 1 ½ inch chunks
1 tablespoon Florida seafood seasoning blend (plus a pinch more for garnish)
1 tablespoon fresh herbs (parsley, dill) plus more whole herbs for garnish
1 lemon, halved
1 tablespoon olive oil
4 to 6 long wood or metal skewers
Non-stick cooking spray
Sea salt and fresh ground pepper, to taste
Preheat a large cast iron griddle or chargrill to medium-high heat.
Make skewers by alternating the zucchini, swordfish, and yellow squash. Make sure to put the same amount of swordfish, zucchini, and squash on each of the skewers. Lightly season the completed skewers with the seafood seasoning and fresh chopped herbs. Lightly spray the skewers with nonstick cooking spray. Carefully add the swordfish skewers to the grill and cook, turning half way until the swordfish is just done. Squeeze half a lemon over the cooked skewers and remove them from the grill or griddle onto a serving platter. Garnish with lemon, fresh herbs and a sprinkle of seafood seasoning. Serve warm.
