2 Florida eggs
1 cup Florida zucchini, shredded
1 cup Florida carrots, shredded
½ cup pumpkin puree
⅓ cup peanut butter
2 ¾-3 cups whole wheat flour
Water, as needed
Preheat oven to 350 degrees. Spray a sheet pan with baking spray and set aside.
Combine the eggs, zucchini, carrots, peanut butter and pumpkin puree in a large bowl and mix to combine. Gradually add the flour, ½ cup at a time, allowing the flour to be mixed in thoroughly each time. Towards the last bit of flour adjust mixture with more flour or water, 1 tablespoon at a time, until it resembles wet sand and will hold together when formed. Sprinkle a small amount of flour on clean surface and knead the dough until it starts to come together. Roll out, or flatten with hands, the dough until it is about ¼-inch thick. Cut out shapes using cookie cutters or even a rimmed water glass and lay onto sheet pan. Place into preheated oven for 20 to 25 minutes or until golden brown. Biscuits will be moderately fragile and crumbly. Cool completely and store in airtight container labeled dog treats. Baking time will depend on size and thickness of treats.
