Florida Watermelon Float

Ingredients

2 cups Florida watermelon, diced large 

2 cups Florida watermelon, juiced 

4 scoops vanilla ice cream  

1 lime, zested then juiced 

1 cup sparkling water, plus more if desired 

Fresh mint sprigs for garnish 

Preparation

To make fresh watermelon juice, puree 2 cups of watermelon in a blender. Strain watermelon puree through a fine mesh strainer.  

To assemble floats, add 1 cup each of the large, diced watermelon to the bottom of two large mugs. Add 1 cup of watermelon juice to each mug. Divide juice into each mug evenly. Stir lightly. Add 2 scoops of ice cream to each of the mugs. Add ½ cup of sparkling water to each mug. Garnish each float with lime zest and a sprig of fresh mint. Use a straw and or spoon to enjoy!
