Florida Zucchini Squash Fritters

Ingredients

1 Florida zucchini, shredded

1 Florida squash, shredded

1/2 cup carrots, shredded

2 tablespoons butter

1 teaspoon garlic powder

2 tablespoons fresh herbs (thyme or parsley), finely chopped

1/2 cup parmesan, shredded

2 eggs

Preparation

Combine all ingredients. Preheat a large saute pan and add butter. Dollop spoonfuls of fritter mix into hot pan and fry 3 to 4 minutes on both sides until golden brown. Serve with applesauce and sour cream.
