1 Florida zucchini, shredded
1 Florida squash, shredded
½ cup carrots, shredded
2 tablespoons butter
1 teaspoon garlic powder
2 tablespoons fresh herbs (thyme or parsley), finely chopped
½ cup parmesan, shredded
2 eggs
Combine all ingredients. Preheat a large sauté pan and add butter. Dollop spoonfuls of fritter mix into hot pan and fry 3 to 4 minutes on both sides until golden brown. Serve with applesauce and sour cream.
