4 to 6 ears Florida sweet corn, shucked
1 stick unsalted butter
2 tablespoons fresh herbs (thyme, rosemary, parsley), chopped fine
1 tablespoon fresh garlic, chopped fine
½ lemon, juiced
1 tablespoon dry BBQ seasoning blend
½ cup Parmesan cheese, grated
1 tablespoon olive oil
Preheat grill to medium-high heat. Season fresh corn lightly with olive oil, a few pinches of seasoning and chopped herbs. Preheat a small cast iron pan on the grill, then add the butter, garlic, herbs, seasoning and lemon juice, stirring ingredients as butter melts. Keep the cast iron on a part of the grill with lower heat for basting the fresh corn.
Carefully add the lightly seasoned corn to the preheated grill. Cook the sweet corn while basting with the seasoned melted butter. Turn and rotate corn while continuing to baste it until cooked to your liking, 2 to 5 minutes. Carefully remove the corn from the grill and serve it on a platter with any extra seasoned butter.
