4 to 6 ears Florida sweet corn, shucked
1 stick unsalted butter
2 tablespoons fresh herbs (thyme, rosemary, parsley), chopped fine
1 tablespoon fresh garlic, chopped fine
1/2 lemon, juiced
1 tablespoon dry BBQ seasoning blend
1/2 cup Parmesan cheese, grated
1 tablespoon olive oil
Preheat the grill to medium high heat. Season the fresh corn lightly with the olive oil and a few pinches of the seasoning and chopped herbs. Preheat a small cast iron pan on the grill, then add the butter, garlic, herbs, seasoning and lemon juice, stirring ingredients as the butter melts. Keep the cast iron in a lower heat part of the grill for basting the fresh corn.
Carefully add the lightly seasoned corn to the preheated grill. Cook the sweet corn while basting with the seasoned melted butter. Turn and rotate the corn while continuing to baste it until it is cooked to your liking, 2 to 5 minutes. Carefully remove the corn from the grill and serve it on a platter with any extra seasoned butter.
