4 (6- to 8-ounce) fresh Florida grouper fillets
¼ cup whole milk (or low-fat milk)
1 cup plain Greek yogurt
3 tablespoons fresh herbs (such as thyme, rosemary, parsley and/or dill), divided
1 garlic clove
1 lemon, juiced
1 teaspoon all-purpose seasoning, plus more to lightly season fish
2 cups panko or regular unseasoned breadcrumbs
1 tablespoon cooking oil
Sea salt and fresh ground pepper, to taste
Prepare dressing by adding milk, yogurt, 2 tablespoons fresh herbs, garlic, lemon juice, all-purpose seasoning, salt and pepper to a blender and blending thoroughly. Taste and adjust seasoning with salt and pepper. Set the dressing aside (or store in refrigerator) until ready to use, reserving 2 tablespoons for breading.
Preheat oven to 350 degrees. Preheat a large, ovenproof sauté pan over medium-high heat.
Prepare the Florida grouper by seasoning the top of each fillet with the reserved 1 tablespoon of fresh herbs and a light seasoning of the all-purpose blend. Add the breadcrumbs to a shallow container. Lightly coat the tops of each seasoned fillet with an even amount of the reserved 2 tablespoons of dressing. Once all the fillets are seasoned and dressed evenly, place them with the top side down in the breadcrumbs to coat the top side only. Repeat this process with the remaining fillets. Carefully shake off any excess breadcrumbs.
Add the cooking oil to the preheated pan and carefully add each coated fillet to the heated pan with the coated side down. Cook each fillet for 3 to 4 minutes, until golden brown and crispy. Carefully flip over each fillet and place the pan in the oven. Bake for another 5 to 7 minutes or until almost completely done throughout. Remove the cooked fillets from the oven and let rest slightly. Serve the Florida grouper fillets with the rest of the dressing.
