2 to 3 dozen fresh Florida oysters, shucked and on the half-shell
2 sticks unsalted butter
Hot sauce (your favorite), to taste
2 tablespoons fresh parsley, finely chopped
3 lemons (1 for juice, 2 cut for garnish)
1 tablespoon fresh garlic, finely chopped
1 teaspoon seafood seasoning
¼ cup Parmesan cheese, grated
Sea salt and fresh ground pepper, to taste
Preheat the grill to medium-high. Use a small sauce pot to combine butter, hot sauce, garlic, seafood seasoning, lemon juice, salt and pepper. Place the butter mixture on the grill to melt. Stir the butter mixture and adjust the seasoning with more lemon or hot sauce if needed.
Carefully place oysters on the preheated grill and let cook for about two minutes until they start to bubble. Carefully spoon an even amount of the melted butter over each oyster, being careful of any flames. Continue to cook the oysters for another two minutes until completely cooked and bubbling in the shells. Use a pair of long tongs to remove the hot oysters from the grill. Place on a heat-proof serving platter. Garnish the cooked oysters with extra herbs and more of seasoned butter mixture. Evenly sprinkle grated cheese over the top. Serve with lemon and toasted crusty bread.
