Italian Sausage Stuffed Florida Bell Peppers

Ingredients

4-6 Florida sweet bell peppers, tops and seeds removed

2 cups Florida mushrooms, rinsed and sliced

2 large Florida tomatoes, diced

1 pound ground Italian sausage

2 cups rice, precooked or leftover

2 cups cheese (mozzarella, provolone or a blend of Italian cheeses), shredded

1 tablespoon Italian seasoning blend (your favorite)

1 cup marinara sauce (homemade or your favorite)

Grated Parmesan cheese and fresh basil for garnish

Preparation

Preheat oven to 350 degrees. Preheat a medium sized sauté pan over medium-high heat. Cook the Italian sausage in the pan for 12 to 15 minutes until completely cooked through. Add 1 teaspoon of Italian seasoning and the sliced mushrooms to the pan with the sausage. Cook for another 2 minutes, then add the diced tomatoes. Stir to combine, then remove the sausage mixture from the heat to let cool slightly. Transfer the mixture to a large mixing bowl and add the cooked rice. Stir ingredients to combine and add another teaspoon of Italian seasoning to taste. Add 1 ½ cups of shredded cheese to the sausage and rice mixture, reserving the last half cup of cheese for the tops of the peppers after stuffing. Evenly stuff all the Florida bell peppers with the mixture and place them sitting up in a casserole dish. Top each stuffed bell pepper with the reserved shredded cheese and a spoonful of marinara sauce. Cook the stuffed bell peppers in the preheated oven for 10 to 15 minutes until the cheese is bubbly. Remove from the oven and let cool slightly. Serve warm garnished with Parmesan cheese and fresh basil.
