1 (2- to 3-pound) whole Florida snapper (head removed, cleaned)
1 tablespoon Florida seafood seasoning blend
1 tablespoon fresh herbs (parsley, rosemary, thyme), chopped fine
1 tablespoon cooking oil (vegetable)
2 lemons (1 halved, 1 juiced)
Whole parsley, rosemary and/or thyme for garnish
Preheat oven to 400 degrees. Preheat a large sauté pan over medium heat. Use a sharp knife to score the fish in the thickest part of the flesh, making a crosshatch on each side. Season the fish with the Florida seafood seasoning blend and chopped herbs by holding it from the tail and allowing the herbs and seasoning to get into the scored parts of the fish. Add the cooking oil to the preheated pan. Carefully add the fish to the pan and cook for 2 to 3 minutes on that side. Carefully flip the fish, add the lemon halves to the pan, cut side down, and place the pan in the preheated oven. Bake for 15 to 20 minutes or until completely done throughout. Remove the fish from the oven and carefully transfer it to a platter. Squeeze fresh lemon juice over the fish and garnish with fresh herbs.
