Queso Stuffed Florida Sweet Peppers

Ingredients

4 to 6 medium-sized Florida sweet peppers, cut in half and seeds removed
2 cups cheddar – Jack cheese, shredded
1 tablespoon all-purpose seasoning blend (everglades or BBQ seasoning)
1 tablespoon fresh parsley or chives, finely chopped
Sea salt and fresh ground pepper, to taste

Preparation

Preheat BBQ grill to medium-high. Evenly stuff the shredded cheese into each sweet pepper half. Sprinkle the top of each cheese-stuffed pepper evenly with seasoning blend and chopped herbs. Carefully place the stuffed peppers on the preheated grill. Cook cheese-side up with top of the grill closed for 7 to 10 minutes until peppers are crisp-tender and charred with cheese melted. Remove cooked peppers from grill and let cool slightly. Serve warm.
