4 to 6 medium-sized Florida sweet peppers, cut in half and seeds removed
2 cups cheddar – Jack cheese, shredded
1 tablespoon all-purpose seasoning blend (everglades or BBQ seasoning)
1 tablespoon fresh parsley or chives, finely chopped
Sea salt and fresh ground pepper, to taste
Preheat BBQ grill to medium-high. Evenly stuff the shredded cheese into each sweet pepper half. Sprinkle the top of each cheese stuffed pepper evenly with seasoning blend and chopped herbs. Carefully place the stuffed peppers on the preheated grill. Cook cheese side-up with top of the grill closed for 7 to 10 minutes until peppers are crisp-tender and charred with cheese melted. Remove cooked peppers from grill and let cool slightly. Serve warm.
