4 ears Florida sweet corn, shucked
2 tablespoons fresh herbs, finely chopped (such as parsley, thyme or rosemary)
2 tablespoons olive oil
Sea salt and fresh ground pepper, to taste
Preheat oven to 400 degrees. Toss corn in olive oil, chopped herbs, salt and pepper. Place on sheet pan and roast for 8 to 10 minutes. Serve warm or room temperature.
Fresh tip: corn kernels can be removed and is perfect to incorporate into salads
