Vegetable Fritters:
1 cup Florida yellow squash or zucchini, diced small
1 cup fresh Florida sweet corn kernels
1 cup fresh Florida snap beans, trimmed and cut into small pieces
1 Florida egg
1 tablespoon all-purpose seasoning
2 tablespoons fresh herbs (thyme or parsley), finely chopped
½ cup whole wheat flour
Vegetable oil for cooking
Yogurt Sauce:
1 cup plain Greek yogurt
1 lemon, juiced
1 tablespoon all-purpose seasoning
1 tablespoon fresh herbs (thyme or parsley), finely chopped
Sea salt and fresh ground black pepper, to taste
Vegetable Fritters:
Combine all ingredients until mixed well. Preheat a large sauté pan and add 1 tablespoon of vegetable oil. Carefully add spoonfuls of fritter mix into hot pan and fry 3 to 4 minutes on both sides until golden brown. Serve with yogurt sauce.
Yogurt Sauce:
Combine all ingredients in a small mixing bowl. Taste and adjust seasoning with salt and fresh ground pepper. Serve cold.
