12 large Florida chicken wings (flats, drum and wing all attached)
2 tablespoons Florida honey
2 tablespoons dry BBQ seasoning blend
3 tablespoons fresh herbs (thyme, rosemary, parsley), finely chopped
1 tablespoon olive oil
1 tablespoon fresh garlic, finely chopped
1 ½ cups BBQ sauce (spicy, Tangy, mild, etc..)
Sea salt and fresh ground pepper, to taste
Preheat grill to medium-high heat. Add chicken wings to a large mixing bowl. Season wings with one tablespoon of BBQ seasoning, one tablespoon chopped herbs and one tablespoon olive oil. Toss to coat. Carefully place the seasoned wings on grill to start cooking (the wings in total should take about 25 minutes to fully cook). In a small bowl, combine BBQ sauce, one tablespoon minced garlic, one tablespoon honey and one teaspoon chopped herbs. Stir the BBQ sauce to combine, then taste and adjust seasoning with salt and pepper. Put half of the BBQ sauce in a separate small container for serving with wings later. Keep half of BBQ sauce handy to baste the wings.
Continue to cook wings evenly while turning and shuffling them around depending on the grill’s hot spots, basting with the BBQ sauce each time they are turned or flipped. Use a food thermometer inserted in the thickest part of the chicken wings to make sure they are fully cooked to 165 degrees. When wings are fully cooked, remove from grill and put into a clean mixing bowl. Discard the BBQ sauce used for basting during the cooking process. In the mixing bowl with the cooked wings, add one tablespoon honey, one tablespoon chopped herbs, one tablespoon dry BBQ seasoning and 3 tablespoons of the reserved honey BBQ sauce. Toss all ingredients to coat. Serve the sticky honey BBQ wings on a platter with the reserved Florida honey BBQ sauce.
