2 cups Florida grapefruit juice
2 large Florida green bell peppers, cut into squares the same size as the pork cubes
1 teaspoon Florida honey
1 teaspoon low-sodium soy sauce
1 teaspoon sesame oil
1 teaspoon hot pepper, finely chopped
1 tablespoon garlic, chopped fine
3 cups boneless pork, trimmed and cut into cubes
1 tablespoon vegetable oil
Sea salt and fresh ground pepper, to taste
In a small skillet over medium-high heat, cook grapefruit juice, honey, soy sauce, sesame oil, hot pepper and garlic until the liquid is reduced by half and is thick enough to coat. Remove from heat and set aside.
Make skewers by alternating pork and peppers. Make sure to put the same amount of pork, and peppers on each skewer. Lightly season the completed skewers with salt and pepper.
Preheat a large skillet over medium-high heat. Carefully add the vegetable oil to the preheated pan. Add the seasoned pork skewers to the large skillet. Cook pork on all sides until completely done in the middle. Use an internal thermometer to make sure the pork is cooked to 165. Lightly drizzle the grapefruit glaze over all the pork skewers, reserving a bit for plating. Remove the pork from the large skillet and place on a serving platter. Garnish the cooked pork skewers with the reserved grapefruit glaze and sliced fresh Florida grapefruit.
