⅓ yellow Florida watermelon, cut into rectangles about the size of corn on the cob
2 limes, zested and juiced
¼ cup Cotija cheese, grated
½ teaspoon smoked paprika
½ teaspoon chili powder
¼ cup fresh cilantro
Sea salt and fresh ground pepper, to taste
Wooden skewers
Spear each watermelon rectangle with a wooden skewer. Place all the watermelon rectangles on a platter. Evenly distribute the lime zest, salt, pepper, chili powder, smoked paprika, Cotija cheese, cilantro and lime juice. Serve cold.
