Florida Egg Avocado Toast

Ingredients

1 ripe Florida avocado, peeled with seed removed

4 large Florida eggs

4 slices whole-grain bread, toasted

8 slices thick-cut bacon, cooked crispy

1 tablespoon Florida all-purpose seasoning blend (plus more, for garnish)

1 tablespoon mayonnaise

1 tablespoon butter

Fresh herbs, for garnish

Preparation

In a small mixing bowl, add the Florida avocado, mayonnaise and seasoning blend. Use a fork to smash the mixture until desired consistency is reached. Evenly spread the mixture over each piece of bread. Evenly top each toast with 2 pieces of bacon.

Preheat a large sauté pan over medium-high heat and carefully add the butter. Carefully crack each egg into the buttered pan, leaving space for each egg to cook. Cook the eggs sunny-side-up for 2 to 5 minutes, depending on desired doneness. Place a cooked egg on top of each toast. Lightly season the top of each toast with the remainder of the seasoning blend and serve warm. Garnish with fresh herbs if desired.
