Florida Beef Gameday Chili

servings 6

Ingredients

1 pound Florida ground beef

2 cups Florida zucchini, diced small

2 cups Florida yellow squash, diced small

1 Florida red bell pepper, seeded and diced small

1 Florida green bell pepper, seeded and diced small

1 medium yellow onion, diced small

½ Florida avocado, seed removed and sliced

¼ cup fresh cilantro, rinsed and hand torn

Florida hot sauce, to taste

1 (15 oz) can cannellini beans, drained

2 (14.5 oz) cans diced fire-roasted tomatoes

1 cup vegetable broth

2 tablespoons chili powder

2 tablespoons cumin

2 tablespoons fresh garlic, chopped fine

2 teaspoons smoked paprika

Sea salt and fresh ground pepper, to taste

Preparation

Pre-heat a large sauce pot over medium-high heat. Add ground beef and onion, cook for about 6 minutes, breaking up the beef as it cooks. Add red and green bell peppers to the pot and cook for another 3 to 4 minutes until the beef is fully browned and the onions and peppers have some color.

Add the vegetable broth, garlic, diced tomatoes, cannellini beans, chili powder, cumin, hot sauce and smoked paprika. Stir well to combine. Bring the liquid to a boil and reduce the heat to a low simmer. Cover and cook for about 30 minutes until slightly reduced and flavorful.

Stir in zucchini and yellow squash and continue to cook uncovered for another 7 to 10 minutes until tender. Adjust the seasoning with sea salt, freshly ground black pepper and hot sauce to taste. Remove from the heat and transfer to serving bowls. Top with sliced avocado and fresh, hand-torn cilantro. Serve with sour cream and grated Colby-jack cheese on the side.
