½ pound Florida ground beef
4 Florida radish, trimmed and sliced thin
½ cup Florida cucumber, sliced thin
½ cup Florida carrot, shredded
2 tablespoons fresh garlic, chopped fine
1 tablespoon fresh ginger, peeled and grated fine
2 cups cooked rice
8 scallions or green onions, trimmed and sliced
White sesame seeds, for garnish
3 tablespoons low-sodium soy sauce
1 tablespoon Florida honey
1 teaspoon toasted sesame oil
Crushed red chili flakes, to taste
Sea salt and fresh ground pepper, to taste
Chili-garlic crisp, to taste
Cook rice according to directions given on packaging and set aside.
Pre-heat a large sauté pan over medium-high heat. Add ground beef and cook for about 6 minutes while breaking beef apart. Drain any excess rendered fat from the pan.
Reduce heat to medium-low. Add garlic, crushed chili flakes, grated ginger, soy-sauce, honey and sesame oil to beef. While stirring, cook another 2 to 3 minutes as the mixture thickens and becomes fragrant. Remove beef mixture from the heat and adjust seasoning with sea salt and fresh ground pepper to taste.
Add a cup of cooked rice to each of two serving bowls. Top with beef mixture and garnish with cucumber, radish and scallions. Sprinkle with sesame seeds and chili-garlic crisp.
