2 cups Florida blueberries
3 tablespoons Florida honey
1 tablespoon fresh garlic, chopped fine
1 teaspoon olive oil
¼ cup vinegar
1 tablespoon fresh thyme, chopped fine
½ lime, juiced
2 teaspoons Florida all-purpose seasoning blend (Everglades or similar) to taste
½ cup ketchup
Preheat a medium-sized saucepot over medium heat, then add the olive oil and finely chopped garlic. Cook garlic for about 1 minute, then add the fresh Florida blueberries, vinegar, Florida honey, thyme, lime juice, ketchup and seasoning blend. Stir ingredients and bring to a simmer. Reduce the heat slightly and cook for about 25 minutes, until thickened and fragrant. Remove from the heat and cool to room temperature. Blend cooled blueberry ketchup in a food processor for a finer texture, if desired. Store in an airtight glass jar in the refrigerator until use.
