2 seven-ounce Florida golden tile fish fillets
½ cup Florida cherry tomatoes
2 tablespoons fresh Florida herbs (dill, thyme, parsley), chopped fine
1 teaspoon Florida hot sauce
2 tablespoons fresh garlic, chopped fine
4 tablespoons butter
2 teaspoons Florida seafood seasoning blend, divided
1 teaspoon olive oil
1 lemon, juiced
Sea salt and fresh ground pepper, to taste
Preheat oven to 350 degrees. Preheat a medium oven-safe sauté pan over medium-high heat. Season fish fillets with one teaspoon seafood seasoning blend. Add olive oil to pre-heated sauté pan and place fish fillets in pan. Cook fish for 2 minutes, flip and add cherry tomatoes. Place pan into the preheated oven and let fish cook for another 3 to 4 minutes or until just cooked throughout. Remove from oven and let rest. Once rested, place fillets on a small platter with the cherry tomatoes.
In the same pan the fish fillets were cooked add the butter, garlic, herbs, hot sauce and one teaspoon seafood seasoning blend. Carefully swirl the pan over low heat to melt the butter while stirring. Adjust seasoning with sea salt and fresh ground pepper to taste. Pour butter sauce over fillets and garnish with extra fresh herbs and lemon wedges. Serve warm.
