4 hoagie rolls
1 pound Florida ground beef
12 ounces provolone cheese
2 cups Florida sweet bell peppers (red, yellow or green), sliced
1 cup onion, sliced
1 tablespoon olive oil
1 cup Florida mushrooms, rinsed and sliced
3 tablespoons fresh herbs (parsley, oregano, thyme), chopped fine
2 tablespoons Worcestershire sauce
2 tablespoons fresh garlic, chopped fine
2 tablespoons Florida all-purpose seasoning blend (divided)
Florida hot sauce, to taste (dash or two)
Sea salt and fresh ground pepper, to taste
Preheat a large sauté pan over medium-high heat. Add olive oil, peppers, onions and 1 tablespoon all-purpose seasoning blend to pan and cook for 3 to 4 minutes until browned. Add mushrooms and continue to cook for another 2 to 3 minutes. Remove from pan and place onto a plate. In the same pre-heated pan add the ground beef and cook until browned, using a spatula to break meat apart as it cooks. Carefully drain any excess fat. Add 1 tablespoon all-purpose seasoning blend, garlic, chopped herbs, Worcestershire sauce, peppers and mushroom mixture and a few dashes of hot sauce, if desired to the ground beef. Mix ingredients together and adjust seasoning with sea salt and fresh ground pepper, to taste. Remove from heat and set aside.
Preheat oven to 325 degrees. Use a parring or bread knife, cut a V shaped wedge from the top of each hoagie roll. Place rolls on a cookie sheet or baking pan. Stuff each hoagie roll with the beef and pepper mixture and top with the provolone cheese. Bake in pre-heated oven for 8 to 12 minutes until toasted and melted. Remove from oven and let cool slightly. Serve warm with steak sauce on the side.
