4 (6-ounce) Florida triggerfish fillets
2 Florida mangoes, diced small
1 Florida red bell pepper, diced small
1 teaspoon Florida spicy seafood seasoning blend
3 tablespoons fresh cilantro, chopped (plus extra for garnish)
3 tablespoons green onion or scallions, sliced fine (plus more for garnish)
1 lime, juiced
2 tablespoons Jamaican jerk sauce (your favorite)
1 tablespoon olive oil
Sea salt and fresh ground pepper, to taste
Mix mango, red bell pepper, cilantro, scallions, and lime juice in a small bowl. Cover and store in the refrigerator for at least 15 to 30 minutes to let the flavors blend.
Warm a large sauté pan over medium-high heat and add 1 tablespoon of olive oil. Lightly season both sides of each fish fillet with sea salt and black pepper. Place fillets in the hot pan. Cook for 2 to 3 minutes on each side until cooked through and flaky. Remove fish from pan and place onto 4 serving plates or a single platter.
Spoon an even amount of chilled mango salsa over each fish fillet. Add a small dab of Jamaican jerk sauce on top of the salsa and fish. Sprinkle with fresh cilantro and sliced scallions. Serve warm.
