2 cups Florida kale (washed and dried, with tender tips hand-torn from the stems)
¼ cup of Florida red cabbage, finely shredded
½ cup Florida cucumber, sliced lengthwise
¼ cup Florida carrot, shredded
¼ cup roasted Florida peanuts, chopped
¼ cup fresh mint leaves (if desired), hand-torn
½ cup scallions or green onion, sliced fine
2 tablespoons rice wine vinegar
2 tablespoons toasted sesame oil
2 tablespoons Florida honey
1 tablespoon low-sodium soy sauce
1 teaspoon crushed red pepper chili flakes
In a medium sized mixing bowl, add the rice wine vinegar, toasted sesame oil, honey, soy sauce and chili flakes. Use a whisk to mix ingredients together. Add the kale, cabbage, cucumber, carrot, green onions and mint. Use tongs to mix ingredients until coated. Serve salad in a serving bowl and garnish with chopped peanuts. Serve cold.
