8 Florida peanut butter cookies
4 tsp Florida peanut butter
2 tbsp roasted Florida peanuts, chopped fine
2 cups peanut butter ice cream
2 tbsp Florida strawberry jam
Place 4 peanut butter cookies flat side up on a clean surface. Scoop ½ cup of ice cream onto the bottom of each of the cookies. Top each scoop with 1 teaspoon of peanut butter and ½ tablespoon of strawberry jam. Sprinkle an even amount of finely chopped peanuts over the peanut butter and jam. Cover each with the remaining peanut butter cookies and press down gently.
Wrap each sandwich tightly in plastic wrap and place in the freezer for at least 20 minutes to harden. Serve frozen.
