3 cups pancake mix
3 cups Florida milk
3 Florida eggs
6 tablespoons vegetable oil or melted butter
1 tablespoon freeze-dried Florida strawberries (plus extra, for garnish)
1 tablespoon Florida blueberry preserves or jam (plus extra, for garnish)
1 tablespoon white chocolate, grated (plus extra, for garnish)
Unsalted butter, for cooking
Florida honey, for drizzling to taste
½ cup strawberry syrup
2 cups whipped cream or whipped non-dairy topping, if desired
In 3 separate small mixing bowls, add 1 cup pancake mix, 1 cup milk, 1 egg, and 2 tablespoons oil or melted butter each. Mix each of the bowls until smooth. In the first bowl, add the crushed freeze-dried strawberries. Add the blueberry preserves to the second bowl. In the third bowl, add the grated white chocolate. Mix each of the bowls separately until combined. You can add more of the flavorings to each separate bowl as desired.
Preheat a large sauté pan or griddle over medium heat. Add a small amount of butter to the cooking surface. Starting with the first bowl of completed pancake mix, add an even amount to the cooking surface, making sure not to overcrowd the cooking surface. Let the pancakes cook until bubbles start to form on top of the batter. Flip pancakes and continue to cook until golden brown and cooked throughout. Repeat process until the pancake batter in each of the 3 bowls is used. Keep cooked pancakes warm in a 250-degree oven until ready to serve. Serve the pancakes warm and garnish with extra blueberry preserves, grated white chocolate, crushed freeze-dried strawberries, whipped cream and strawberry syrup. Serve with Florida honey.
