1 medium-sized Florida eggplant, cubed large
2 cups Florida red cabbage, sliced thin
1 large Florida red sweet bell pepper, sliced thin
½ cup scallions or green onion (rinsed, trimmed, and sliced)
1 tablespoon low-sodium soy sauce
2 tablespoons fresh garlic, minced
1 tablespoon chili-garlic crunch, to taste
2 tablespoons vegetable cooking oil
2 cups rice, cooked
Sea salt and fresh ground pepper, to taste
Preheat a large sauté pan or wok over medium-high heat. Carefully add 1 tablespoon cooking oil, thinly sliced red cabbage and the thinly sliced red Florida sweet bell peppers. Cook ingredients, while stirring, for 3 to 4 minutes, until slightly softened and partly crispy. Remove the cabbage and sweet peppers from the pan. Add 1 tablespoon cooking oil back to the same pan. Carefully add the sliced eggplant to the same oiled pan,and cook the sliced eggplant for 2 to 3 minutes, until the eggplant is golden and crispy on the outside. Add the cooked cabbage and sweet peppers back to the pan with the eggplant and stir. Add the garlic, sliced scallions and soy sauce to the pan. Stir all ingredients. Taste and adjust seasoning with sea salt and fresh ground pepper. Serve over warm, cooked rice and garnish with chili-garlic crunch, to taste.
