1 ½ pounds Florida rock shrimp, peeled
1 large Florida tomato, cored and sliced thin
4 large Florida hydroponic lettuce leaves (or your favorite)
½ cup Florida celery, rinsed and sliced fine
1 ½ tablespoons Florida hot sauce (or to taste)
4 green onions or scallions, sliced small
1 lemon, juiced
2 tablespoons fresh Florida herbs (dill, thyme, parsley), chopped fine
½ cup mayonnaise
1 tablespoon Dijon mustard
3 tablespoons Florida seafood seasoning blend (plus 1 teaspoon for buns)
2 tablespoons softened butter
Sea salt and fresh ground pepper, to taste
4 to 6 top slice hot dog buns
Fill a medium-sized sauce pot ¾ the way with water, heat over medium-high and bring to a boil. Add 2 tablespoons of seafood seasoning and rock shrimp to pan and cook for 2 to 3 minutes or until just done. Plunge the shrimp into ice water to stop cooking and cool off completely. Strain cooled shrimp and place into a medium-sized mixing bowl. Use a paper-towel to soak up any excess moisture.
In a small bowl combine mayonnaise, Dijon mustard, lemon juice, hot sauce, celery, herbs, 1 tablespoon seafood seasoning blend, scallions and mix thoroughly. Add sauce mixture to shrimp in mixing bowl and stir to coat. Adjust seasoning with sea salt and fresh ground pepper to taste.
Butter hot dog buns and season lightly with the remaining teaspoon of seafood seasoning blend. Heat a flat griddle or large skillet over medium heat and toast the hot dog buns slowly until golden and a little crisp. Remove buns from the griddle and place onto a platter or serving plates. Add hand-torn lettuce and sliced tomato to each bun. Use a slotted spoon to top each bun with a generous amount of rock shrimp mixture. Garnish with extra lemon and fresh herbs. Serve immediately.
